Small is cute!

During my trip to NYC, I wanted to use  many ingredients and cook up as many fancy meals as possible! All my brother had to do, was introduce me to BJs. I loved going there everyday. I was fancied by the mini color peppers. Everything is big in the US. And so was the packet of peppers. I had already envisioned the future of those peppers – bhajjis, bruschetta, stuffed peppers! Owing to lack of space in my brothers kitchen, we used the oven to store our famous Indian utensils. Vihaan (my nephew) had a time of his life when we emptied the oven to bake.

This post is a simple bruschetta using the orange, yellow and red peppers.
8 mini peppers of various colours
2 tablespoon Olive oil
2 tsp Cayenne pepper
2 tsp oregano
Coriander for garnishing
Salt to taste
Cheese cubes (optional)
Baguette to serve
Recipe: Serves 4
  • Preheat over at 375 F.
  • Slice the baguette and arrange them on a tray.
  • Slice peppers and mix with olive oil, cayenne, oregano and salt.
  • Spoon them on the baguette and garnish with coriander and grated cheese.
  • Bake for about 20 minutes.
