Mango Coconut Milk Ice-cream

With mangoes in season, it is the perfect afternoon treat. Mango Coconut Milk ice cream is delectable and light and can be made with just 3 ingredients! Mango is a truly sensual fruit: sweet and juicy. This ice cream interestingly marries 2 unique ingredients and their personalities: the sensual mango & the pure coconut milk. Try this and you will love it!

Ingredients:DSCF4671

Ripe mangoes (cubed): 600 gms
Condensed milk: 1/2 can
Coconut milk: 2 packets of 200 ml each
Mint leaves and chopped mangoes for garnishing

Chill all the ingredients for atleast a minimum of 4 hours.

Chop the mangoes into medium sized cube. Transfer the same into a food processor and puree the same. Alternatively you can transfer into a big bowl and use a hand blender.

In a large bowl, combine the pureed mango, condensed milk and coconut milk. Beat well using a hand blender and set aside for 10 minutes.

If you have an ice-cream maker, add the puree to it and follow the instructions to make the ice cream

Else you can pour the mixture into a freezer proof bowl, cover air tight and freeze until set. Once frozen, beat once again thoroughly using a blender and refreeze until set. This takes about 8 to 10hours.

Mango-Coconut Milk Ice Cream is now ready to be served. You can garnish with mint leaves and chopped mangoes and serve.
