Sometimes the only thing that can skyrocket the flavour of a dish is# .I love to use my cast iron pan to saute onions with olive oil. The result is awesome!! Supposed to be favourite among weightwatchers, mushroom-caramelized onion panini. #easylunchboox
Mushroom filling:
2 cups mushrooms
1 tsp Olive oil
1 tsp crushed black pepper
Salt to taste
For caramelized onions:
2 medium sized onions
2 tbsp Oilve oil
A pinch of salt
Garnish:
2 tbsp chopped parsley
2 tsp chilli flakes
Whole wheat bread to serve
Equipment: Cast Iron Pan
1. To begin, we will first sauté the mushrooms. Bring the cast iron pan to a medium heat. Add a tsp of olive oil and sprinkle some salt and black pepper and stir-fry until the mushrooms have cooked. Transfer the mushrooms to another bowl.
2. The next step is to caramelize the onions. Onions are naturally sweet. When you slowly cook onions over an extended period of time, the natural sugars in the onions caramelize, making the result intensely and wonderfully flavourful.
3. Slice the onions. On a medium heat skillet, transfer the sliced onions and sprinkle with a pinch of salt. Simmer to low heat and caramelize onions, by slowly cooking them in a little olive oil until they are richly browned. The caramelized onions are now ready for use.
4. To assemble the panini, lightly brush a slice of bread with softened butter or little olive oil. Toast until crisp. Place a small amount of caramelized onions on top of the slice followed by a spoonful of mushrooms and spread it evenly on the bread slice. Garnish with chopped parsley and chilli flakes.
5. Your Panini is now ready to be served. You can alternatively use color peppers in place of mushroom.
