This salad hit all the right notes. Crunchy toasted pine nuts, fragrant fresh figs, dollops of ricotta, generous thick drizzles of honey, a pinch of himalayan pink salt and a dash of black pepper. You can make this salad at home with very less effort.
What you will need:
2 cups fresh ripe figs
2 tbsp ricotta
1 tbsp honey
1 tsp olive oil
2 tbsp toasted pine nuts
Salt to taste (I use pink Himalayan salt)
Pepper to sprinkle
1. Wash the figs throughly in running water. Quarter the fig (if it small) or chop to a size you are comfortable with.
2. The next step is to toast the pine nuts. You can toast them on stove top on a cast iron skillet on low heat. They should be crunchy.
3. Now add the ricotta to the salad, drizzle honey and olive oil.
4. Sprinkle with salt and pepper.
5. You salad is now ready to be served.
