Coffee and Love. Birthday time at home.

Mr. Nags, the central purpose of my blog turns older by another year. Backbreaking day for me – lunch cooking, Hindi revision for S, lunch date with school buddies and baking for a nag!

Coffee is all I can think of when it comes to Nags. So, a simple Espresso cake with coffee frosting.

Serves: 8 – 10
3 tsp instant coffee powder
1 tablespoon hot water
3 eggs
3/4 cup dark brown sugar (powdered)
1 cup all purpose flour / maida / + 2 tsp baking powder + a pinch of salt or self raising flour
1 tablespoon cocoa powder
150 g butter (melted)

Coffee frosting
3 tablespoon filter coffee decoction
1/2 cup sugar Brown sugar
1/4 cup soft butter Butter

Pan: 21 cm round pan

  • Grease the pan and line it
  • Combine coffee and water in a small cup to dissolve
  • Beat eggs in a bowl until thick and creamy (abt 6-8 minutes)
  • Add sugar little by little beating until dissolved between additions
  • Fold in sifted flour, cocoa, followed by melted butter and coffee mixture
  • Pour mixture in the pan and bake in gas mark 5 for about 40 minutes.
Coffee frosting
  • Combine all and beat it well.
  • Chill for 10 minutes
You can use any nozzle to sort of create designs. I usually like to keep it very simple.
